- Prepare 5 of herb and ranch roasted fingerling potatoes-diced (see recipe on my profile).
- Take 2 tbsp of olive oil.
- Prepare 1 clove of garlic-minced finely.
- Prepare 2 of eggs.
- Prepare 1/2 tsp of oregano.
- It’s 1/2 tsp of Season salt.
- It’s 1/2 tsp of pepper.
- Prepare 1 1/2 tsp of butter.
- Take 1/4 cup of shredded cheddar cheese.
- Prepare 2 of flour tortillas.
- Make ready 1 of sour cream and salsa for toppings.
Cheesey Brunch Burritos step by step
- Heat minced garlic on medium heat with 2 tblsp olive oil until golden brown..
- Add butter and potatoes and let saute for about 3-4 minutes..
- Meanwhile, whisk eggs with oregano, season salt and pepper..
- Add eggs to potatoes and scramble/stir until eggs are cooked and well incorporated..
- While eggs are cooking, heat up tortillas and set aside. I usually put mine in the microwave for about 20-30 seconds or you can heat them on the stove in a dry(ungreased) pan until warm..
- Add shredded cheese and mix well until gooey and melty. Turn off the heat as the pan heat will continue to melt the cheese. Mix well..
- Take warm tortillas and put on a plate in a U shape and stuff down the middle..
- Add sour cream and salsa to your taste. Fold each side to the middle and enjoy!.
- ***This recipe can be mixed up however you like. You can add veggies or onions or use whatever toppings you like from refried beans to jalapenos. Be creative!.
