Ingredients of Chettinad Masala Veg Biryani
- It’s of For Chettinad masala.
- You need 1 tbsp of Stone lichen.
- Take 1/2 tsp of Marathi moong.
- Make ready 1/2 tsp of Cardamom powder.

- Prepare 2 gms of Star anise.
- Take 1 tsp of Green saunf.
- Make ready 10 of Pepper corn.
- Make ready 1 tsp of Coriander seeds.
- Make ready 1 tsp of Jeera.
- You need of For the Biryani.
- Prepare 1/2 kg of Seeraga Samba Rice soaked for one hour.
- You need 200 gm of Carrot grated.
- You need 200 gm of Cauliflower grated.
- Make ready 100 gm of Mushroom diced fine.
- It’s 250 gm of Onion sliced.
- You need 200 gm of Tomato.
- Prepare 1 tbsp of Ginger and garlic paste.
- Make ready 200 gm of Oil + ghee.
- Take 1 tbsp of Green chilli.
- It’s 1 tbsp of Chettinad Masala.
- You need 1 tsp of Red chilli powder.
- Prepare 1 cup of Coriander + mint leaves.
- It’s 2 tbsp of Sesame seeds.
- You need 2 of Cardamom.
- Make ready 1 of Bay leave.
- It’s 1 stick of Cinnamon.
- Prepare 1/2 tsp of Turmeric powder.
- Prepare 1 cup of Curd.
The preparation of this biryani takes some time as both mushrooms and rice are marinated.But the cooking is easy and one pot.Vegetable Biryani is a quick and easy one pot meal that you can make for lunch.You need to plan few things before hand like making ginger garlic paste too and once such method is this one.

- Heat the pan and dry roast all the spices individually until darkened.When done grind them together to a powder. Keep aside..
- Boil 2 litres of water.Add the soaked rice.Cook it to 80 percent..
- Heat a deep pan.Add oil and all spices.Add onions and fry to a golden brown.Add the ginger garlic paste and toss well with onions..
- Add tomatoes and cook them till they are melted. Add chilli,turmeric and chettinad masala.Add grated carrot,diced mushroom and cauliflower pieces and stir fry well.Add the curd..
- Add rice to this masala mixture. Sprinkle the chopped coriander,sesame seeds and mint leaves over the mixture..
- Cover tightly with a lid.Leave to cook for 20 minutes on a low flame..
- Leave it covered until served..
- Serve hot..
