Ingredients of West African Peanut Stew

  1. Take 2 of medium sweet potatoes peeled and diced.
  2. You need 3 cloves of garlic chopped.
  3. Prepare 3 tablespoons of chopped fresh ginger.
  4. You need 1 of medium red onion diced.
  5. Make ready 3 of leeks, white part, chopped.
  6. You need 4 of small carrots chopped.
  7. Take 1/4 cup of smooth unsalted natural peanut butter (just peanuts).
  8. You need 2 tablespoons of tomato paste.
  9. Take 1 can of coconut milk.
  10. Prepare 1 box of vegetable stock.
  11. Prepare to taste of Madras curry powder.
  12. You need to taste of Garam masala.
  13. You need of King's Pepper seasoning spice blend.
  14. Make ready 1 bunch of cilantro.
  15. Take 1 bunch of fresh collard greens. Washed & cut in bite size.

West African Peanut Stew instructions

  1. Saute onion, leeks, carrots, ginger, and garlic in a few tablespoons of coconut oil on medium low heat till tender. Add sweet potatoes and some salt and pepper. Saute for a few minutes then add stir in peanut butter and tomato paste with 1/2 cup water. Stir well then add coconut milk, bring to a simmer. Add broth and adjust seasonings adding more curry, garam masala, and collards. Add broth. Put lid on and simmer low till vegetables are tender. Adjust seasonings..
  2. Add King's Pepper spice to taste. Serve with cilantro and chopped toasted peanuts..
