Ingredients of Zenoni Kuku Keinyeji
- Make ready 1/4 portion of kuku kienyeji.
- It’s 1 of red onion.
- Make ready 1 of tomatoes (optional).
- Prepare 1 of garlic bulb.
- Prepare 1 of ginger hand.
- Prepare 50 ml of cooking oil.
- It’s 1 teaspoon of salt.
Zenoni Kuku Keinyeji step by step
- In boiling water add 1 garlic and 3 ginger fingers(preferably diced). Add 1/2 a teaspoon of salt. Boil until the chicken becomes tender (around 20 min). Pour majority of the stock and save a little for later procedures..
- Grate the remainder of the garlic and ginger. Chop the onions into neat semi-rings..
- Stir fry the chicken pieces on a pan in the cooking oil..
- Add the onions; cook until they achieve a golden brown color. Add the tomatoes, garlic and ginger; cook for 3 min.
- Season with salt (or seasoning of choice) to taste. Pour in about 100 ml of the stock (saved from earlier). Cook until the stock dries up..
- Serve with starch of choice. We went with Roast potatoes(whose recipe will be posted on this page, stay tuned!).
