- Spray fry pan and add onions until softened..
- Upon a grill or grill pan cook the bacon until cooked.
- Remove and set aside.
- Beat the eggs, add salt & pepper add to the greased fry pan.
- Take the bacon off when cooked an set aside.
- Slice cheese and drop in the egg on frypan.
- Add the bacon on top of the cheese and the onion.
- Then fold over the other half of the omelette over bacon.
- Sprinkle the mozerella cheese on top of the half and grill..
- Serve immediately. You could fry tomatoes to garnish too if you like..
