Ingredients of Gumbo Chicken and Smoked Sausage Creole
- Take 1/3 cup of oil for frying.
- You need 1/3 cup of all purpose flour.

- You need 1 1/2 tsp of soy sauce.

- It’s 3/4 tsp of black pepper.
- Make ready 5 dash of hot sauce.
- Take 2 cup of chicken stock.
- Take 1 cup of sherry.
This will remove a ton of grease.I use boneless, skinless chicken thighs as well.Combine the oil and flour in a large cast iron or enameled cast iron Dutch oven over medium heat.To prepare the smoked chicken, rinse and clean chicken, pat dry.

I gave up the pig ages ago.So, I opt for chicken and green onions sausage.Just make sure that you brown them well before adding them.
