Ingredients of Split Black Gram Fritters - Medu Vada.
- Take 1 cup of Split Black Gram without outer cover.
- Prepare 3 of Whole Pepper Corns.
- Take 1/2 tsp of Baking Soda.
- Prepare 1 of Salt.
- Prepare of Dry Roast.
- Take 1 tsp of Split Black Gram without the outer cover.
- It’s 1 tbsp of Rice (uncooked).

- Soak the Split Black Gram in water overnight..
- After 12 hours, dry roast the ingredients under the Dry Roast column above in a pan till the color turns to stark white..
- Drain the soaked Split Black Gram and blitz it along with the dry roasted ingredients, pepper corns, salt, and baking soda..
- It should be a fine thick paste. Add very little water if it's difficult to blitz..
- Heat oil in a vessel (to deep fry) and add small amounts of the dough paste in the vessel through a spoon. Take it out when the color turns to the picture above..
- You can have this with any sauce, but the authentic sauce for this is a Coconut Chutney..
