Ingredients of Kaddu ka dalcha and baghara khana
- Prepare of Kaddu ka dalcha.
- Take 200 gms of meat.
- Take 1/3 cup of tuar dal / arhar daal.
- Prepare 1/2 or a medium size of bottle gourd.
- Take 2 of tomatoes.
- Take 1 tsp of turmeric powder.
- You need 1.5 tsp of red chilli powder.
- Take 1.5 tbsp of ginger garlic paste.
- It’s 3 tbsp of oil.
- Prepare 1 of lemon sized tamriand soaked in water.
- It’s 1 handful of curry leaves.
- Make ready 1 bunch of coriander leaves.
- Take 1 tsp of garam masala.
- Make ready 3 of whole green chillies.
- Take as per taste of Salt.
- You need of Baghara khana.
- It’s 2.5 cups of rice.
- Take 1 of onion.
- It’s 1 tbsp of ginger garlic paste.
- Take 3 of green cardamoms.
- Take 1 " of cinnamon stick.
- Take 4 of cloves.
- You need 1 tbsp of shah jeera / caraway seeds.
- Make ready 1 bunch of coriander leaves.
- Make ready 4 tbsp of oil.
- Make ready as per taste of Salt.

- For kaddu ka dalcha, wash meat and keep aside. In a pressure cooker heat oil add ginger garlic paste, red chilli powder, turmeric powder and saute well. In another pressure cooker or pot boil the tur dal..
- Now add tomatoes and meat. Add 1cup of water and close the lid. Cook it on high flame for 7 minutes and then simmer it for 15 minutes..
- Mash the dal. Check whether meat has become tender. If not cook for some more time. Now add pieces of bottle gaurd cut in diamond shape and close lid of cooker..
- After 10 minutes bottle gourd will be tender, now add boiled and mashed dal, tamriand paste and curry leaves. Let it come to boil. Now add coriander leaves, whole green chillies and garam masala. Simmer for 5 minutes. Dalcha is ready..
- Now for baghara khana wash and soak rice in water for 10 minutes then heat oil in a pot, add all the whole spices and fry them. Add sliced onion and fry it. Add ginger garlic paste..
- Add strained rice and saute them for 5 minutes. Add 5 cups of water and salt..
- When water is about to dry then add chopped coriander leaves. simmer for 7-8, minutes..
