Ingredients of Chicken Gulai
- Take 350 g of Chicken meat (deboned, skinless).
- You need 40 g (4 clove) of Shallots.
- Prepare 20 g (3 cloves) of Garlic.
- Prepare 8 pc of Dried Chilies.
- Make ready 20 g (1 inch) of Ginger.
- Take 20 g (1 inch) of Galangal.
- Take 20 g (1 stalk) of Lemongrass.
- Make ready 20 g (1 inch) of Turmeric root.
- It’s 1 cup of light coconut milk.
- You need 3 of Kaffir Lime Leaves.
- It’s 2 pc of Tamarind slices (asam keping).
- Prepare 1 Tbsp of Palm Sugar.
- Prepare 3 Tbsp of Cooking Oil.
- Make ready of Salt to taste (4g or less).
- You need of Optional;.
- You need 1 stick of Cinnamon.
- You need 2 pc of Star Anise.
- It’s 3 pods of Cardamom.
Chicken Gulai instructions
- Blend shallots, garlic, dried chilies, ginger, galangal, turmeric and lemongrass into a paste..
- Add oil to wok and heat up until hot. (Fry the cinnamon, cardamom and star anise here). Fry the paste until the oil separates. Add chicken and cook well (about 5 minutes both sides)..
- Add the coconut milk, tamarind slices and salt and palm sugar. Cook until the liquid is reduced to a desired consistency or until dry..
