Ingredients of Chicken Catch (AYAM TANGKAP)
- It’s 1/2 of chicken (500 gr), cut in small pieces according to taste.
- Take 300 ml of coconut water.
- You need 2 tbsp of palm sugar.
- You need 1 stalk of lemongrass, crushed.
- Take of Enough oil for frying.
- It’s of GROUND SPICES:.
- You need 3 of shallots.
- Take 2 cloves of garlic.
- It’s 3 of cayenne peppers.
- You need 5 of peppercorns.
- It’s 1/4 tsp of turmeric powder.
- You need 1 cm piece of ginger.
- It’s 2 tbsp of lime juice.
- You need 1/2 tsp of salt (to taste).
- Prepare of SLICED SPICES:.
- Take 2 of shallots, thinly sliced.
- It’s 2 cloves of garlic, thinly sliced.
- Take 5 sprigs of curry leaves.
- Take 2 of turmeric leaves, thinly sliced.
- Take 3 of lime leaves, ribs removed.
- It’s 1 stalk of lemongrass, use white part and thinly sliced.
- Make ready 3 of pandan leaves, sliced into 1 cm pieces.
- You need 2 of green chilies, cut diagonally.
- Prepare 1 of red chili, cut diagonally.
Chicken Catch (AYAM TANGKAP) step by step
- Boil chicken using coconut water then add the ground spices, palm sugar and lemongrass..
- Cook until the liquid is low and spices are infused, then drain chicken..
- Fry chicken until slightly browned (when frying, chicken should be completely submerged in oil). Add chili, shallot and garlic..
- After they are bit wilted/soft, add the curry leaves, turmeric leaves, lime leaves, lemongrass and pandan leaves. Fry until seasoning is cooked and crispy..
- Drain and enjoy served hot with rice..
