Ingredients of Egg Bhurji & Momos
- It’s 10 of Eggs.
- Prepare 2 tbsp of Vegetable Oil.
- Prepare 1 Cup of Onion (Chopped).
- Make ready 1 Cup of Tomatoes (Chopped).
- Prepare 1/4 Cup of Carrot (Chopped).
- It’s 2 tsp of Green Chillies (Chopped).
- It’s 1 Tbsp of Ginger (Chopped).
- Prepare 1 Tbsp of Garlic (Chopped).
- Make ready 3 Tbsp of Fresh Coriander leaves(Chopped).
- Make ready 1/2 tsp of Turmeric Powder.
- Take 1/2 tsp of Coriander Powder.
- Prepare 1/2 tsp of Garam Masala.
- Take 1 tsp of Red Chilli Powder.
- Take to taste of Salt.
- It’s 2 Tbsp of Szechuan Sauce.
- Prepare of For dough -.
- You need 1 cup of Maida.
- It’s to taste of Salt.

- Make ready 1 tsp of oil.

Egg Bhurji & Momos step by step
- Prepare a firm, non-sticky dough with maida, salt and water. Add Oil to dough and knead. Cover with wet cloth, keep aside. Now prepare Egg Bhurji..
- Heat vegetable oil in a pan. Add Green Chillies, Ginger, and Garlic. Then add Onions, Carrot and saute until onions turn slightly browned. Next, add Coriander powder, Turmeric powder, Garam Masala and Red Chilli powder and mix well..
- Now add Tomatoes, Salt and cook for 1-2 minutes. Break the Eggs in a small bowl first and then add them in the pan and mix well. Add Szechuan Sauce. Keep stirring the eggs on low heat until they get mixed with masala and get cooked..
- Cook until it gets scrambled. If you like perfect Bhurji, then cook until eggs are nicely cooked. Also it will filled well with Momos..
- Add Coriander leaves and mix well. Serve hot with Pav or Bread or Rice's flour Dosa.
- Now for Momos Take a small lemon size ball for rolling, use a little flour to shape the puri. Roll out the dough as thin so that the outer layer of the momo is thin and delicate. Place prepared Egg Bhurji in the center of the puri. Start folding and form the pleats one by one then fold its all sides in centre and pinch. Take care while folding..
