Ingredients of Dried Shrimp/Anchovy Fried Rice

  1. Prepare of cooked rice, put in the fridge at least for 1 hour.
  2. You need of small shallots, minced.
  3. You need of garlic cloves, minced.
  4. You need of lemon grass, white parts, thinly sliced (optional).
  5. It’s of green onion, separate the white and green part, thinly sliced.
  6. Make ready of eye bird chili/Thai chili/jalapeno (omit if do not like spicy), thinly sliced.
  7. It’s of dried shrimp/anchovy, chopped (can use anchovy paste or anchovy from a can).
  8. Make ready of salt.
  9. Prepare of sugar.
  10. Prepare of ground white/black pepper,.
  11. It’s of large eggs, lightly beaten with 1/8 tsp salt.
