Ingredients of Sweet Potato Cornbread Muffins
- You need 2 of sweet potato / steamed / mashed.
- It’s 3/4 cup of fat free milk.
- Take 2 tbs of vegetable oil.
- Take 1 of egg.
- It’s 1 cup of sour cream.
- You need 1/2 cup of maple syrup.
- Prepare 2 tbs of wholewheat flour.
- It’s 1 1/2 cup of corn meal.
- Take 1 of /2 cup sugar.
- You need 1/2 tsp of ground cinnamon.
- You need 1 tsp of ground nutmeg.
- Take 1/2 tsp of salt.
- You need 1 tsp of baking powder.
Sweet Potato Cornbread Muffins step by step
- Mix dry ingredients: cornmeal, flour, salt. Nutmeg, cinnamon, sugar, baking powder.
- Mix, sour cream, egg, milk, vegetable oil Maple syrup.
- Add dry mixture into wet mixture.
- Set oven 390f oil muffin tin, pour batter into muffin tin.
- Cook about 17 minutes, until cake tester comes clean.
- Let it cool on the rack.
