Ingredients of Not your Mama's potato salad!
- Make ready of salad.
- You need 5 small of potatoes (I like yukon gold or red).
- You need 5 of hard boiled eggs.
- It’s 3 of green onions, thinly sliced.
- Make ready 1/2 of red bell pepper, diced.
- You need 3 slice of crispy bacon, diced.
- Take 1/4 of mayonnaise.
- It’s 2 tbsp of course ground dijon mustard.
- You need 1 tsp of salt.

- You need 1/2 tsp of garlic powder.
- Make ready 1/2 tbsp of apple cider vinegar.
Cook potatoes until they are tender, drain and cool.In a large bowl combine the miracle whip, sour cream, mustard, chili powder and cayenne.Add the scallions, roasted red pepper, tomatoes and pasta, and toss the salad to coat evenly.I'm not normally a fan of horseradish but my hubby loves it and he considers potato salad one of the main food groups.
