- Make ready 500 gms of chicken thigh boneless mixed or , cut into bite-sized pieces.

- Take to taste of salt.
- Take 2 tbsps of oil for shallow fry/deep fry.

- You need 1 tbsp of oil.
- It’s 1 tsp of soya sauce.
- Make ready 1/2 cup of spring onions white part chopped.
- It’s 2 tbsps of schezwan sauce /paste*.
- Take 1 tbsp of honey.
- You need 1 tbsp of black pepper corns honey pepper whole ground the & to make a coarse paste.
- Prepare 1 tbsp of tomato ketchup.
- You need to taste of salt.
- It’s 1/2 cup of chicken stock.
- Take 2 tsps of cornflour /starch.
- You need of FOR GARNISH.
- It’s 2 tbsps of spring onion greens chopped for garnish.
- Take 1 tsp of pepper powder.
- Make ready 1 tsp of ginger chopped/paste.

- Wash the chicken, pat dry. Rub & mix salt, pepper, flour & corn starch to the chicken..
- Heat oIl in a pan, shallow fry the chicken on high flame, stirring & flipping continuosly*, until cooked. Keep aside.
- Heat oil on a high flame in a wok or any deep pan, add Szechwan paste and soy sauce, once it splutters, add onions and fry for a minute. add ginger and fry for a minute..
- Then add the honey pepper paste, fry for a minute..
- Now add the tomato ketchup, salt & mix well..
- The final stage & a very important step is mix cornflour with chicken stock. Add this to the prepared chicken..
- Garnish with spring onion greesn, black pepper and cut red chillies before serving. Serve hot with Fried Rice or Noodles..
