Kashmiri Dahi Baingan is an aromatic gravy that has a unique taste because of the subtle but wonderful way eggplant / brinjal come together with curds. It has a nutty, tangy flavor because of the ginger and fennel spices.

Ingredients of Airfryer Kashmiri dahi baigan
- You need 300 grams of brinjals chopped long.
- Make ready 1.5 cups of yoghurt.
- It’s 1 tablespoon of saunf powder.
- It’s 1 teaspoon of dry ginger powder.
- Prepare 1/3 teaspoon of turmeric powder.
- Take 1/3 teaspoon of red chilli powder.
- Make ready 50 ml of water.
- Take 1/4 teaspoon of hing.
- Take 5-6 of cloves.
- It’s 5-6 of green iliachi.
- Prepare to taste of Salt.
- Prepare as required of Fresh coriander leaves for garnish.
- It’s 2 teaspoons of Oil.

Airfryer Kashmiri dahi baigan instructions
- Brush the chopped brinjals with oil and sprinkle some salt and airfry them for 5-10 min at 180 degrees in airfryer..
- Take a wok sprayed with oil, add cloves, green cardamom,hing till it crackles..
- Mix the dry spices with water and make a paste..
- Add the spice paste to the wok and roast the spices well till oil starts leaving from the sides..
- Remove pan from heat, add the whisked yogurt and mix well. Place pan back on low heat and keep stirring constantly to avoid curdling..
- Add the airfried baigan pieces to this. Adjust salt according to taste. Cook on low heat for 5-7 mins..
- Garnish with fresh coriander leaves and serve hot..
