Ingredients of Mango badam kulfi..
- You need 250grm,(2medium size mangoes) of Mango.
- Prepare 1.25 ltr (full cream) of Milk.
- Make ready 10-12 of Cashew:- chopped finely.
- It’s 10-12 of Almonds:- chopped finely.
- Prepare 1 pinch of Saffron (Kesar).
- You need 3/4 cup of Sugar.
- Take 1/4 tsp of Cardamom (elaichi).
Traditional kulfi is made by boiling milk to reduce it, and to concentrate the milk solids, then freezing the base with flavorings such as fruit pulp, spices or nuts Though kulfi is often compared to ice cream, it's nothing like it: Kulfi isn't churned The protein and sugar create a rich, dense texture that is slightly crystalline and quick to melt Add the almond paste, Stir and let the mixture cool.Add the mango puree, pistachio slices and mix well.Pour mango kulfi into serving bowls or kulfi moulds.Serve cold and top with saffron, sliced pistachios, cardamom powder or falooda.

- Take 1.25 litre milk in a pan, heat on a high flame and boiled it After that keep boiling the milk at law flame till it reduces to 25% of total quantity remember keep stirring the milk. Now make mango purée in mixer At this point pour almonds, cashews,sugar, cardamom and pinch of saffron into milk. And keep boiling for next 10-15 min.at low flame.
- When the mixture comes at room temperature add mango puree and chopped mangoes in to it now it's ready to filling in the kulfi moulds and freeze for 8-10 hrs….
