Ingredients of Mango Loaf cake
- Make ready 2 cups of Mango purée (Alphonso/kesar) -.
- Prepare 11/2 cup of Maida.
- Take 1 cup of castor sugar.
- Take 1 cup of unsalted and melted butter.
- Prepare 1/2 cup of condensed milk.
- It’s 3 of eggs.
- Prepare 1 1/2 tbsp of baking powder.
- It’s 1 tsp of baking soda.
- It’s 2 tsp of Vanilla essence or cardamom powder.
- Prepare 1 pinch of salt.

Mango Loaf cake step by step
- Peel and purée the mangoes and keep aside.
- Lightly butter and flour a baking tray. Dust out the excess flour by tapping the tray. Keep aside. Pre Heat the oven at 200 C for at least 10 mins..
- In a mixing bowl, cream together the butter and castor sugar at medium speed, till light and fluffy..
- Now break the eggs one by one and whisk together till the mixture is light And frothy..
- Add in the vanilla essence / cardamom powder, condensed milk and whisk again, till the mixture is smooth..
- In a separate bowl, sift together the Maida, baking powder, baking soda and salt..
- Now slowly fold in the dry mixture into the egg mixture and whisk at medium speed, till the flour is incorporated well into the egg mixture and you get a batter of dropping consistency..
- Now gently fold in the mango purée and mix it by following the cut method..
- Pour the batter into the prepared baking tray, tap lightly to remove the bubbles and bake it in the middle rack (conventional OTG), for about 25-30 mins, till a toothpick inserted comes out clean..
- Cool it on a wire rack. Once cool, unmould it, dust it with icing sugar, cut slices and enjoy it with a hot Cuppa..
This loaf cake is extremely easy to make!You just need to measure together your dry and wet ingredients and then fold them together until combined.When ready to serve, lift the mango cake from the loaf pan using the parchment and discard the paper.
