Kashmiri cuisine has many rich and flavorful dishes that are simple yet different. In this traditional rice dish, basmati rice are first sauteed in butter laced spices, cooked in saffron flavored water and then mixed with shallow fried dry fruits, freshly cut fruits and fried onion.

Ingredients of Kashmiri Pulav…Loaded with dry fruits,saffron and nuts,rich
- It’s 1 cup of long grained basmati rice.
- Make ready 1/2 cup of sliced onions.
- You need 2 tbsps of ghee.
- It’s 2 tbsp of cashews.
- Make ready 2 tbsp of pistas.
- Take 2 tbsp of almonds.
- Take 1 tbsp of raisins.
- Take 1 tbsp of finely chopped coriander leaves.
- Prepare 1 tsp of fennel seeds.
- Take 1 tsp of jeera.
- Take 1 tsp of red chilli powder.
- Prepare 1/2 tsp of ginger paste.
- Prepare 1/2 tsp of garlic paste.
- You need 4 of whole pepper corns.
- It’s 2 of lavang / cloves.
- Make ready 1 of green elachi.
- Take 1 of small stick dalchini.
- Take 2 tsps of warm milk.
- It’s Few of strands of kesar.
Kashmiri Pulao with step wise photos and instructions.Kashmiri Pulao is a luscious Pilaf recipe which is overloaded with flavours, fruits and dry fruits.It is a pure Kashmiri delicacy which is equally renowned in rest of the nation too.In this dish, Long grain Basmati Rice is cooked in Saffron milk, some spices and then combined with assorted fruits, dry fruits and fried Onions.

- Soak the rice in enough water for 30mins,drain and keep aside.
- Soak saffron in milk for 15 mins.,mix well and keep aside.
- Heat ghee a pressure cooker,add cashews,pistas and raisins,saute on medium flame for 2min.
- Drain, remove the nuts and keep aside..
- In the same pressure cooker,add bayleaf,elachi,lavang,dalchini,jeera pepper corns, fennel seeds,saute for 30 second for 2mins.
- Add onions and saute for more 2 mins..
- Add ginger, garlic paste, chilli powder and saute on slow flame for 2 secs..
- Add rice,salt. and saute on medium flame for 1 min..
- Add 1 1/2cups of water, corridor, saffron milk,mix gently and cook for 1min..
- Pressure cook for 2 whistles..
- Allow the steam to escape, before opening the lid..
- Add the prepared nuts and dry fruits evenly on the rice..
- Serve hot with raita..
