Ingredients of Kaju Gathiya Sabji
- Take 4 tbsp of oil.
- Prepare 3 of cloves.
- Prepare 1 of dry red chilli.
- Prepare 1/2 tsp of cumin seeds.
- It’s 2 of onion pureed.
- Make ready 3 of tomato pureed.
- Prepare 1 1/2 tbsp of garlic, chilli and ginger paste.
- You need as per taste of Salt.
- Prepare 1/2 tsp of turmeric powder.
- You need 1/2 tsp of cumin and coriander powder.
- Take 1/4 tsp of garam masala.
- Make ready 1 tbsp of red chilli powder.
- You need 1 cup of gathiya, regular.
- You need 1/2 cup of cashew nuts ,roasted.

- Now, heat heavy pan and heat oil and add cumin seeds, red chilli and cloves. Let it saute for a while, then add the onion puree and cook for 2 mins. Then add ginger, garlic and chilli paste. And cook until it turns light brown. Then add tomato puree and salt as required in tomato..
- Other side roast cashews till then tomato puree will get cooked nicely and release the oil..
- Then add all dry spices, salt and cook for a min. Then add water about 1 and half cup and let it simmer for 2-3 mins..
- Then add gathiya and simmer for a min. Late add roasted cashews and again simmer for 2-3 mins. (If it absorbs all water and dried out then add some water to adjust consistency).
- Now, serve with roti, salad, and onion and buttermilk. (After some time like 5-10 mins Gathiya will absorb water, so try to keep it in gravy form).
