- Prepare 1 cup of all purpose flour.
- You need 1/4 cup of semolina (sooji).
- You need Pinch of salt.
- Make ready of 1/2 cup + 3 tbsp ghee (solid form).

- Pre-heat the oven to 375 F degrees..

- Add the flour mix (No.1 ingredients) and mix until it become a soft and smooth. Can add a tbspn of milk to make it smoother!.
- Wrap the dough and rest it for 30 minutes..
- After 30 mins, take a dough and make into a ball(in a small marble size). Then flatten the ball slightly with a palm of your hand. Make a shallow hole and add Jam..
- Lined the baking tray with grease proof paper and place the flatten shortbread on there. Put in the oven for 25mins or until the bottom turns slightly brown/ golden coulour..
- Remove nankhatai from oven and let it cool completely..
