Ingredients of Lazy Man Burrito

  1. Take 1/2 cup of diced onion.
  2. Prepare 1/2 cup of diced musrooms.
  3. Prepare 8 each of large tortillas.
  4. You need 1 1/2 lb of ground beef or chicken.
  5. Prepare 1 packages of tacobell seasoning.
  6. Prepare 3 cup of heavy whipping cream.
  7. You need 2 can of enchilada sauce.
  8. Prepare 3 cup of mexican shredded cheese.
  9. It’s 2 can of refried beans.
  10. Take 1 1/2 can of whole corn.
  11. Make ready 1 box of yellow mexican rice.

Lazy Man Burrito step by step

  1. preheat over to 350.
  2. preheat pan at medium heat.
  3. in medium mixing bowl put 1 1/2 cans of corn with half a can of enchilada sauce seal and put in the fridge.
  4. when the pan is heated put diced mushrooms and onions. cook till onions are almost clear. add 1/2 cup of heavy cream.
  5. reduce heat let simmer and liquid cook down. cook for 10 min..
  6. add ground beef or chicken to the mix cook thoroughly.
  7. in medium pan slightly grease and heat up tortillas. 30 sec on each side should do it. cut the stack of heated tortillas in half.
  8. in a small pot heat the refried beans..
  9. while the beans are heating grab another bowl add remainder of enchilada sauce to mixing bowl and the heavy cream mix completely and put in fridge.
  10. cook yellow rice as directed on the box or bag..
  11. now start layering components like a lasagna. adding a decent amount of the heavy cream/ enchilada sauce and cheese..
  12. cover pan with aluminum foil and bake for 30 min.
  13. after the 30 min remove aluminum foil and bake for another 30 min.
