Quinoa and black bean caserole instructions

  1. Ground turkey.
  2. Boil quinoa.
  3. Cut up bell pepper.
  4. Once quinoa is hearty, mix half large cut bell pepper and quinoa together.
  5. Drain beans and add to quinoa.
  6. Drain tomatoes and cut up and add to quinoa.
  7. Add ground turkey.
  8. In caserole dish, layer with blue corn tortilla chips.
  9. On top of tortilla chips layer quinoa mixture.
  10. Top with cheese and add another layer of blue corn tortilla chips.
  11. Repeat layers as desired.
  12. Preheat oven to 400°F.
  13. Bake 20-30 mins.
  14. Let stand.
