I must admit that I am not a curry expert. I am not an expert making very authentic curries but I do enjoy eating various types from all over the region, though.

Ingredients of Cape Malay Chicken Curry
- Take 1 kg of Chicken with bones.
- Make ready 2 of Onion medium finely chopped.
- Make ready 2 tsps of Ginger , finely chopped.
- Take 1 can of Tomato tomatoes puree or crushed.
- Take 1 tbsp of Coriander powder.
- You need 1 tbsp of Paprika powder ( or the Kashmiri Chilly powder will do ).
- Prepare 1 tsp of turmeric powder.
- Take 1 1/2 tsps of black pepper powder.
- Make ready 1 tbsp of Garam Masala.
- You need 2 tsps of garlic finely chopped.
- It’s 1 tbsp of Lemon juice.
- It’s 2 tsps of brown sugar.
- You need 2 tbsps of oil.
- Take to taste of Salt.
- It’s of Spice Mix The.
- Make ready 2 tsps of fennel seeds.
- You need 1 1/2 tsps of Cumin Seeds.
- Prepare 5 - 6 pods of cardamom.
- Make ready 1 of cinnamon stick.
- You need 3 - 4 of chilles dry red.
Naturally this depends on the individual cooks, and the curry can be made much stronger by adding more chillis (hot peppers).This recipe is my way of cooking a chicken curry, more or less.A traditional Cape Malay chicken curry recipe (that's easy to make) from Zainie Misbach.With sweetness from chutney, mellow spices and crunchy almonds, this Cape Malay style chicken curry is more of a gentle braise than fiery Indian curry.

- Clean the chicken and keep it aside..
- . Using a motor and pistil or a grinder, grind all the spice mix coarsely and keep aside..
- . In a heavy bottom pan, heat some oil and saute the onions and ginger till soft..
- . To this, add in the coriander powder, turmeric powder,pepper powder, and the spice mix and mix well..
- . Once the powders are toasted, add in the tomato puree and bring it boil..
- . Then add the chicken and mix well till all the pieces are coated well. Cover with a lid and let it cook for 15-20 mins..
- . After 20 mins, add in chopped garlic, brown sugar and lemon juice and mix well. Add salt at this stage and mix well..
- . Cover and let it cook for another 15 minutes or till the meat is tender..
- . Check for seasoning and turn of flame..
- .Garnish with finely chopped coriander or parsley leaves and serve along with hot rice..
