Kousa Mahshi is a traditional Middle Eastern delicacy where baby marrows are stuffed with a mix of soaked rice, mince meat, herbs and seasonings. It is then cooked on a bed of tomato sauce.

  2. Prepare 1/3 cup of soya granules, soaked in hot water for 15 minutes & drained.
  3. You need 1-2 of green chilies, chopped.
  4. Prepare to taste of salt.
  5. It’s 1/4 tsp. of pepper powder.
  6. Make ready 1/2 tsp. of roasted cumin powder.
  7. It’s 1 tbsp. of roasted peanuts, powdered.
  8. Prepare 1 tbsp. of fried fresh grated coconut.
  9. Make ready 1 tbsp. of fried onion, crushed (opt).
  10. It’s 1 tbsp. of coriander leaves, chopped.
  11. Make ready of Kousa Mahshi -.
  12. Take 5 of baby marrows, washed and dried.
  13. You need 2 of large tomatoes, roughly chopped.
  14. Prepare 1 tsp. of tomato paste.
  15. You need 1 tsp. of sugar.
  16. Make ready 2 of bay leaves.
  17. You need 1" of cinnamon stick.
  18. You need 1/2 tsp. of cumin powder.
  19. Make ready to taste of salt.
  20. Take 1/2 tsp. of coriander powder.
  21. Take 1/2 tsp. of red chilli flakes.
  22. Prepare 1 tsp. of coriander leaves, chopped.
  23. Take 1/2 tsp. of garam masala powder.

Veg. Kousa Mahshi - Fusion Style step by step

  1. Soya Stuffing - In a bowl, mix all the mentioned ingredients for the stuffing and lightly stir fry on a pan (without adding any oil) for 1-2 minutes. keep aside..
  2. Kousa Mahshi - Boil the tomatoes along with 2 cups water, tomato paste, sugar and salt for 2 whistles. Keep aside..
  3. Score the baby marrows them with the help of a knife or an apple corer to make them hollow..
  4. Fill the marrows with the soya stuffing..
  5. Pour the tomato sauce in a pressure cooker and add all the dry spices, bay leaves and cinnamon..
  6. Place the stuffed marrows on it. Close the lid & pressure cook for 3 whistles..
  7. Carefully, transfer the cooked marrows to another dish and strain the tomato sauce. Simmer further till it is slightly reduced..
  8. While serving, arrange the cooked marrows on a serving dish & pour the liquid over it. Garnish with coriander leaves and serve with pita bread, plain steamed rice, jeera rice, pulao or any Indian bread..
