- Make ready 5 of Green chilli (big).
- It’s 1 tsp of coriander ground.
- You need of Salt.
- You need of Oil.
- Take of Raw ingredients.
- It’s 1 of whole free range chicken (cut small).
- Prepare 3 of lemongrass.
- It’s 5 of lime leaves.
- Prepare of Salt.
- Make ready of Pepper.
- Make ready of Sugar.
- You need of Water.
Cover the chicken breasts with the green chili mixture.Then top with the monterey jack cheese.Whisk mixture until it is smooth and cheese has melted.Stir in shredded chicken and top with remaining cheddar.

- Blend all the blended spices until become paste..
- Heat a pan, sautee the paste until fragrant,.
- Bring the chicken in, add water, lemongrass, and lime leaves. Boil with a low heat until it's tender (approximately 1 hour)..
You can serve it with sour cream, avocado, cilantro, and corn tortillas or corn bread.Then stir in the green chilis and stir until evenly mixed.Lay the chicken breasts flat in a baking dish.
