Shepherd's pie is the epitome of simple and homely comfort food. It's an easy and quite basic dish to put together, that's been around for a very long time and there are probably hundreds of variations of it.It's a homey, comforting casserole that we all love that combines ground meat, peas, carrots and corn, then topped with a mountain of mashed potatoes! In the USA, any recipe with meat and veggies and mashed potatoes on top is a Shepherd's pie, whether you like it or not. This is a wonderful recipe to which I added chopped red bell pepper.
